About us

Pasticceria Tosi continues its journey in the name of excellence, blending the legacy of Maestro Renzo Tosi with the vision of brothers Federico and Lorenzo Frascari. This story takes root in 1962, when Pasticceria Tosi became a landmark of taste in Salsomaggiore Terme. For over sixty years, the bakery has been the guardian of an ancient art, culminating in the creation of the famous Focaccia Dolce: a symbol of craftsmanship capable of spanning generations without ever losing its identity. It is precisely this heritage, built on unchanging gestures and respect for long proving times, that represents the solid foundation for this new chapter.

Federico, who grew up in the Maestro’s workshop as his apprentice, took up the mantle after completing a high-specialisation programme at the Montersino academy. Under the guidance of great masters of confectionery art, he perfected a savoir-faire that inspires the entire production today, ensuring a balance between respect for the past and innovation. By his side, Lorenzo brings years of experience gained as a business management consultant to the project. His contribution is essential in translating creative flair into organised processes, ensuring that the brand’s expansion occurs without ever compromising on quality.

The growth we pursue does not betray the original philosophy: to preserve the slow and solemn rhythm of fine craftsmanship so that every taste remains an encounter with the flavours that have made Pasticceria Tosi a legend.
